Baked chicken is bland. Add flavor with slices of mozzarella and sliced mushrooms.
This dish is easy to prepare and bakes in around 30 minutes.
Can be a quick dinner or a solid meal prep staple.

- 2 large eggs, beaten
- 1 cup of seasoned bread crumbs,
- 2 tablespoons of unsalted butter,
- 6 ounces of sliced mozzarella cheese,
- up of chicken broth.
Preparation Directions
- Preheat your oven to 350° F,
- Place 2 cups of the mushrooms into a 9×13″ baking dish,
- Dip the chicken breasts into the beaten eggs, then roll in bread crumbs,
- In a medium skillet, melt butter over medium heat. Brown both sides of chicken in skillet.
- Place chicken on top of mushrooms in the baking dish, arrange remaining mushrooms on chicken, and top with mozzarella cheese. Add chicken broth to pan,
- Bake in preheated oven for 30 to 35 minutes. A good indicator that it is ready is when the inside of the chicken is no longer pink and its juices run clear

Serving Suggestions
Let the chicken cool for about 5 minutes after you remove it from the oven.
You can either serve yourself a plate of a breast or 2 or store it in tupperware and take it to work each day.
