Turkey and Sweet Potato Hash

Turkey is a great protein source. It’s leaner than red meat and has less saturated fat.
Adding sweet potatoes to ground meat adds a healthy dose of fiber and sweetness to turkey that makes it irresistible!

1 tbsp olive oil
1 lb. ground turkey
2 cups sweet potato, peeled & cubed
2 cloves garlic, minced
2 tsp dried parsley
1 dash salt & pepper
4 cups spinach
Preparation Directions
- Heat olive oil in large skillet, add turkey and cook until browned, about 5 minutes,
- Add sweet potatoes and minced garlic and stir,
- Stir in salt, pepper, and parsley,
- Cook until sweet potatoes are soft, about 10 minutes.
- Add spinach and cook until wilted, approximately 5 minutes,
- Serve hot and ENJOY!!
Serving Suggestions
Split between two dinner plates and enjoy!
Another option is to let the hash cool for 10 minutes, split into 2 servings and store in tupperware to take to work/
