2 tbsp olive oil
1 cup onion, diced
1 tbsp cayenne pepper
1 tsp cumin
1 tsp garlic powder
1 lb ground beef, extra lean
4 cups diced tomatoes
1 tsp oregano
1 bay leaf
3 cups sweet potatoes, diced
½ cup mushrooms, sliced
1 cup carrots, sliced
1 cup zucchini, diced
1 cup red pepper, diced
2 cups kale leaves, chopped
3 dashes salt & pepper
Preparation Directions
- Heat olive oil in large soup pot.
- Add diced onion and cook until translucent.
- Add beef and spices. Cook until beef is brown.
- Add diced tomatoes, and add additional can of water to the pot.
- Add sweet potato, mushrooms, carrots, and rest of spices.
- Lower heat and simmer for about 40 minutes, stirring occasionally.
- Add zucchini and red pepper. Cook for another 20 minutes.
- Add kale, salt and pepper and cook for 10 more minutes.
- Remove bay leaf.
- Serve and enjoy!
